Lapsang Souchong (Chinese: 正山小种, pinyin: zhèngshān xiǎozhǒng) is a smoked black tea. The term Lapsang Souchong actually refers to several types of tea that can have little more than a smoky flavor in common. The most traditional and finest example of the teas in this category is often referred to by the Mandarin pronunciation: Zheng Shan Xiao Zhong. This version of lapsang starts with a very fine pluck, the best being only made of leaf buds or "tips." These are processed and smoked in one continuous process. (more)
